Dreaming of Ireland

In the spirit of Saint Patrick’s Day, we are dreaming of an Ireland vacation. Lush, green and full of friendly people, Ireland is a dreamy adventure vacation. There are so many great sites to see so let’s get inspired!

Blackrock Castle: A castle built in the 16th century near Cork by Queen Elizabeth the I to repel pirates and other invaders. It now holds Ireland’s first fully interactive astronomy center!

Blackrock Castle (

Blarney Castle: A medieval castle that is famous for the Blarney stone, which is said to give the gift of eloquence if you kiss it upside down.

Cliffs of Moher: A beautiful destination overlooking the Atlantic ocean from almost 400 feet above sea level. The cliffs have appeared in numerous films such as The Princess Bride, Harry Potter and the Half Blood Prince and Leap Year!

The Giant’s Causeway: An area of about 40,000 interlocking basalt columns from a volcanic eruption.  ”Legend tells of an Irish warrior Fionn, who built a causeway to Scotland. One version of the legend tells that Fionn was challenged by a Scottish giant, Benandonner. Now Benandonner was much much larger than Fionn, so he tried to think of a way out. His wife, Oonagh, came up with an ingenious idea. When Benandonner crossed the bridge looking for him, Oonagh disguised Fionn as a baby and tucked him in a cradle. When Benandonner came, Oonagh told him that Fionn was out woodcutting, but he should be back soon. She showed him ‘Fionn’s son’. When Benandonner saw the size of the baby, he had no desire to see the father! Benandonner fled home in terror, ripping up the Causeway behind him, so the ‘enormous Finn MacCool’, would not follow him

Guinness Brewery: If you are a lover of the Irish brew, or even if you aren’t, the brewery is quite a site to see! Get the inside scoop on the making of the beer and end the tour in a room with 360 degree views of Dublin!

The Mourne Mountains: A granite mountain range with the highest mountains in Ireland. I mean, does this picture not entice you enough?

Mountains, Northern Ireland

NewGrange: A prehistoric monument built about 3200 BC, which makes it older than Stonehenge and the Egyptian Pyramids. Nobody knows for sure what is was for, but most likely has religious significance. The circular mound had tunnels and carvings inside. It is aligned with the rising sun and is filled with light during the winter solstice.

Who doesn’t love some delicious potatoes? Try this Colcannon Potatoes recipe or if you want to switch it up from the traditional dish, here is a healthier Sweet Potato version! It’s safe to say that a traditional Irish meal isn’t very “diet” friendly, but who can resist some homemade Irish Soda Bread?? On the lighter side, this Guinness and Onion Soup is a unique dish to try alongside the traditional main dish of Corned Beef and Cabbage. Of course, who wants to leave out a chocolatey treat?! Try these Guinness Chocolate Cupcakes as a fun twist on dessert.
